AMERICUS — The following food service inspections were conducted recently by the Sumter County Health and Environmental Services Office.
• Captain D’s seafood, 1305 E. Lamar St., Americus — Dec. 31 — 91 A
— Observed an open beverage in food prep area. All drinks in food prep area should be in a disposable cup with a lid and a straw. Cup was thrown away. Corrected On-Site.
— Observed sanitizer level too low in sanitizer bucket used for cleaning tables and trays. Chlorine level should be at 100 ppm. Corrected On-Site.
— Observed wet mops and brooms stored on the floor. These items should be stored off the floor when wet. Corrected On-Site.
• Magnolia Manor Nursing Home, 2001 S. Lee St., Americus — Dec. 13 — 100 A
• Nate’s, 707 Magnolia St., Americus — Dec. 18 — 93 A
— Observed cooked items stored in cooler that were prepared on an earlier day and did not have proper date marking. Items cooked that are not consumed within 24 hours have to be date marked.
— Observed potentially hazardous food thawed in an improper manner. Fish thawing in sink without water. Discussed proper thawing methods. 1. Frozen to ready to eat. 2. Thaw in sink with running water. 3. Thaw in cooler.
— Remarks: Need to have servsafe asap.
• Perfect Care Inc., 114 Sullivan Drive, Americus — Dec. 7 — 90 A
— Observed ham and roast beef ready-to-eat food (RTE) stored with raw meats and eggs. Need to store RTE meats above raw animal products. Corrected On-Site.
— Observed sugar on floor in dry storage and small hole in wall. Need to repair the small hole above baseboard and seal floor juncture. Correct By: 01/07/2013
— Remarks: Dish machine chlorine level was 100 ppm and three-compartment sink quat level was 200 ppm both are good)
• Rosemary & Thyme, 125 W. Lamar St., Americus — Dec. 20 — 87 B
— Observed raw animal food not properly separated from ready-to-eat food (raw chicken stored with sauces, raw fish stored with cooked beans). Raw animal products should be stored separately, below ready to eat foods. Corrected On-Site.
— Observed ready-to-eat, potentially hazardous food prepared on site and held more than 24 hours with not properly date marked. Corrected On-Site.
— Remarks: Dish machine final rinse was 180 degrees. No current certified food service manager; must have someone signed up for food safety manager training within next 30 days and have completed training successfully within next 60 days.
• Sheppard House Restaurant, 1608-H E. Forsyth St., Americus — Dec. 12 — 96 A
— Observed cooling methods not being used properly. Cooling methods discussed with person in charge. Items in error were corrected. Corrected On-Site.
— Observed floor in walk-in cooler soiled with excess food debris. Floor needs to be cleaned and free of debris. Observed utensil drawer with food build up from prep table. Drawer needs to be kept cleaned and sanitized.
• South Georgia Technical College Cafeteria, 900 South Georgia Tech Parkway, Americus — Dec. 10 — 91 A
— Cooked potentially hazardous food (sausage gravy) not cooled from 135 degrees F. to 70 degrees F. within two hours. (Placed in cooler at 9:30 a.m., temperature at noon was 80 degrees F.). Gravy was discarded. Corrected On-Site.
— Remarks: Quat sanitizer 200 ppm in sinks and buckets. Discussed cooling times and methods with person in charge.
• Subway No. 3553/Forsyth, 1039 E. Forsyth St., Americus — Dec. 20 — 94 A
— No conspicuously located thermometer in holding unit, front reach-in cooler. Corrected On-Site.
— Observed employee with no hair restraint. Must wear hat or hair net when working in prep area. Corrected On-Site.
• Sumter County Correctional Institute/ABL Prison, 346 McMath Mill Road, Americus — Dec. 17 — 100 A
• Sumter Youth Development Campus, 300 McMath Mill Road, Americus — Jan. 2 — 100 A
• 3 Squares Diner, 12-4 Martin Luther King Jr. Blvd., Americus — Jan. 23 — 93 A
— Wiping cloth chlorine sanitizing solution not at proper minimum strength. Needs to be around 100 ppm for bleach. Corrected On-Site.
— Remarks: Dish machine sanitizer level was good.
• American Legion Post No. 558, 116 Ga. Highway 20 West, Americus — Jan. 25 — 96 A
— Observed chemical sanitizer solution above proper maximum strength. Chlorine sanitizer (bleach) should be between 50-100 ppm. Corrected On-Site.

The Home Run to be held in Jay Williams’ memory
Jay Williams, of Plains, was an outdoor type of guy, enjoying activities such as running and bicycling. He was also a spiritual man and enjoyed sharing his faith with others. When he died after a falling accident in June 2012, his friends really missed him. Two of those friends, Travis Kelly and Rebecca Ferguson, decided to carry out a race event that Williams had planned, to benefit the Methodist Youth Home in Americus.

Ru Story-Huffman named dean of GSW’s James Earl Carter Library
Ru Story-Huffman, interim dean of the James Earl Carter Library at Georgia Southwestern State University, was officially named dean. Prior to her role as interim dean, Story-Huffman served as reference librarian and government information coordinator at the Carter Library. She succeeds Vera Weisskopf who retired in March 2012.
