Health inspections: April 9, 2016

AMERICUS — The following food service inspections were conducted recently by Sumter County Environmental Health.
• 1800 Mexican Restaurant, 329 W. Lamar St., Americus — March 28 — 89 B
— Observed many (20-30) large pans of food that were all date marked with today’s date. Even Hershey’s chocolate syrup was date marked 3/28/16). Appeared that someone had put date mark stickers on everything with today’s date. Questioned person in charge (PIC) about this and was told that staff had come in early that day. It was not possible to have prepared that much food, cooked and cooled it all to 39-41 degrees F. Then PIC said that most of the food had been prepared the previous day (Sunday). Corrective action: PIC will train staff to put actual date that food was prepared on the pans or may use day dots to label pans.
— Observed three spray bottles with chemicals (?) with no label as to what was in it. Corrective action: bottles were labeled with common name of cleaner in them.
— Observed raw packaged frozen fish sitting in bucket of cold water in sink. Meats may be thawed in container of water with cold running water running over it. Container was placed under cold running water to thaw.
— Remarks : New food service changes discussed with PIC.
• 2 Dukes Bar-be-que, 500 Tripp St., Americus — Sept. 3, 2015 — 100 A
March 16 — 87 B
— Observed no documentation of the Certification on display. Certified Food Service Manager (CFSM) showed his current CFSM card that showed it does not expire until 2017. Documentation should be display for customer to see. Will get a copy from ServSafe or will make a copy of his CSFM card by March 30, 2016.
— Observed records for time as public health control but no records for the past week. If using time, there should be records every day that show the temperature that it started off at and the time they put TCS foods out. Corrective action: They will start back keeping records.
— Remarks: Spoke with the CFSM about the new food rules and gave them the handouts explaining the new rules.
• 3 Squares Diner, 1204 Martin Luther King Jr. Blvd., Americus — Oct. 9. 2015 — 74 C
— Observed no soap in the men’s restroom. Soap should be available in order for the person to clean their hands properly to remove any bacteria on their hands. Corrective action: Soap was replaced.
— Observed Ready-to-Eat (RTE) food (sour cream, strawberry juice, margined) stored next to raw beef and shell eggs. Raw beef was moved to the bottom of the shelf and margined was moved to the shelf across from the eggs. Must store RTE foods separately/above raw animal foods.
— Observed the dish machine not dispensing the required amount of chlorine to sanitize the dishes. The dish machine should dispense the right amount of sanitizer to properly sanitize the dishes. The sanitizer container was out of sanitizer solution. Corrective action: The sanitizer was changed out and the dish machine was dispensing the right amount.
— Discussed with employee about how they cleaned the dining tables. They use only one bucket/one cloth to sanitize the table. Explained the proper way to sanitize the tables is to use two buckets/two cloths in each bucket.
— Observed potentially hazardous food items on preparation table (sliced tomatoes, sliced cheese) and in reach-in cooler (cut tomatoes, boiled eggs, and creamer) stored at temperatures above 41 degree F. All time/temperature control for safety foods must be kept at or below 41 degree F. Corrective action: – Items in the reach-in cooler were discarded and tomatoes were discarded on the prep table and cheese will be used in two hours or thrown away.
— Observed shell eggs stored on counter with no time indication start or discard time for four-hour hold period. Manager has time procedure (TPHC) and will retrain employees to follow procedure.
Nov. 9, 2015 — 68 U
— PIC not performing duties of monitoring cold-hold temperatures on prep table and glass door cooler. Items on prep table were being held with ice; however, there was no ice, only water (ice had melted).
— Observed no soap available in men’s restroom. Corrective action: soap was replaced.
— Observed pans/containers in sanitizer section of three-compartment sink. PIC said pans had been washed, rinsed and sanitized using bleach. Residue on dishes and in sink were checked; however, no sanitizer was detected. Corrective action: Pans will be rewashed, rinsed and sanitized.
— Observed TCS items on top of prep table (ham, tomatoes, cheese) and In glass door cooler (half and half, boiled eggs, milk, tomatoes) held at greater than 41 degrees F. Items were discarded and foods on prep table replaced with new ice around containers. Items in glass door cooler were discarded. Temperature of cooler was reading slightly high; however, after rechecking later, temperature had returned to 41-42 degrees F. TCS foods will not be placed back in cooler until PIC is sure that temperatures are holding on foods. Employees will try to limit time in cooler and close door ASAP.
— Observed potentially hazardous food (corned beef) on counter by vegetable sink being thawed at room temperature. Corrective action: Corned beef was discarded.
— Hot water not provided/shut off at front employee hand ash sink. Needs to have repaired immediately. Correct By: 11/10/2015
Nov. 19, 2015 — 86 B
— Observed raw pork chop stored above French fries and carrots in cooler. Observed raw ham stored next to pasteurized eggs and strawberries. Corrective action: Pork chop was moved/discarded. Raw ham was moved to lower shelf.
— Observed sanitizer in buckets at front counter with chlorine level too strong (>150 ppm). Corrective action: solution was diluted to proper strength.
— No copy of latest inspection report posted (old inspection still posted).
Remarks: Discussed with PIC that the temperatures of foods stored below the prep table were slightly elevated (42 degrees F. )They will monitor to be sure there is not a problem.
• 8 Inn Motel (tourist accommodation inspection), 1206 Martin Luther King Jr. Blvd., Americus — Sept. 23, 2015 — 94 A
— Observed running toilet in room 113; toilet needs to be cleaned in room 112, and missing cold fixture at the facet in room 132. Guest toilet/lavatory/bathing should be clean and well maintained.
— Observed multiple holes in bedding in room 145. Bed covering should be clean and in good condition.
• Americus-Sumter Ninth Grade Academy, 915 N. Lee St., Americus — Aug. 24, 2015 — 100 A

• American Legion Post 558, 116 Ga. Highway 30 West, Americus — Feb. 24 — 87 B
— Observed no Certified Food Safety Manager (CFSM) at this establishment. Someone with manager responsibilities should be CFSM. Corrective action: Someone should be sign up or already have taken a CFSM class by 03/09/2016. They must bring a receipt that they are sign up or the original documentation to the Health Department by that date.
— Observed no hand washing liquid in the men’s restroom. Hand washing liquid should be provided in all restrooms and at all hand washing sinks to prevent contamination. Corrective action: Soap was added.
— Observed no paper towels at the hand washing sink in the kitchen and no paper towels in the women/men restrooms. Paper towels or a hand drying method should be provided to dry hands. Corrective action: Paper towels were added.
— Observed time/temperature control for safety food (eggs) with an expired date. TCS food should be thrown out by the manufactured expiration date. Corrective action: Eggs were discarded.
Remarks: Spoke with the person in charge about the new food rules changes. Gave him the new handouts explaining the changes.

• Americus-Sumter Senior Center, 717 N. Jackson St., Americus — Dec. 14, 2015 — 96 A
— Observed moldy build-up on inside parts of ice maker. Ice maker needs to be periodically cleaned to prevent mold build-up. Corrective action: Icemaker will be cleaned within the next two to three days. Correct By: 12/17/2015
• Anderson Station, 107 E. Church St., Andersonville — Sept. 29, 2015 — 98 A
— Observed single-use/single-service articles (paper cups) stored in the storage area on the floor and on top of fly trap paper. Single-use articles should be stored off the ground and away from pest control traps. Corrective action: Cups will be picked up from ground and moved away from fly trap paper.
— Observed in the storage area no light in order to see the proper products. Adequate lighting should be provided in storage area. Corrective action: Light bulb will be replaced.
• Andersonville RV Park, 211 W. Church St., Andersonville — Sept. 29, 2015 — 98 A
— Old inspection posted in display cabinet where permit is posted. Current inspection was in ladies bathroom. Another old inspection was posted in men’s bathroom Corrective action: Need to post today’s current inspection in the display cabinet outside of bath house.
