Health Inspections 7-23-16

AMERICUS — The following food service inspections were conducted by Sumter County Environmental Health.
• Tracy’s Fried Chicken, 612 N. Lee St., Americus — Feb. 18 — 100 A
— Waffle House, 1207 Martin Luther King Jr. Blvd., Americus — Jan. 14 — 84 B
— Observed TCS (time/temperature control for safety) foods (eggs, raw ham) stored next to ready to ready to eat foods (cheese, whole tomatoes, jalapeño peppers). Raw foods should be stored below and away from ready to eat foods. Eggs will be moved to the lower level in the reach-n cooler, and raw ham will be removed from cheese. Corrected On-Site.
— Observed the dishwashing machine not properly working. The hot water sanitization was not reaching 180 degrees F. The dishes will be sanitized in the three-compartment sink. Corrected On-Site.
— Observed ice scoops stored in cups that were not clean. Ice scoops should be stored in a clean and sanitized location. Scoops were washed and sanitized and stored in a cup. Corrected On-Site.
— Remarks: Spoke with the manager about the new food rule changes. Gave them food handouts about the changes.
• Wendy’s, 1202 Crawford St., Americus — Jan. 27 — 86 B
— Observed no paper towels in the women restrooms. Paper towels should be supplied in a restroom where a person has to put their hand on the door to pull and leave the restrooms. Paper towels will be supplied.
— Observed no written time on the time/temperature control for safety foods cold holding (tomatoes, cheese, and lettuce). Discussed with the manager and was told that they put out the TCS foods at 9 a.m.; it has been five hours. If using Time as a Public Health Control, items should be marked with a discard time in order to know when the TCS should be thrown out. TCS will be discarded. Corrected On-Site.
— Observed an out of date food inspection posted. There should be a up to date food inspection displayed at all times. The new inspection will be posted. Corrected On-Site.
— Remarks: Spoke with the manager about the new food rule changes. Gave her the new handouts about the changes.
• Woods Wings, 1043 E. Lamar St., Americus — Feb. 11 — 100 A
• Zaxby’s, 1204 Crawford St., Americus — March 24 — 91 A
— Observed potentially hazardous food (slaw, blue cheese) cold-held at greater than 41 degrees F. on prep table top. TCS foods must be cold held at 41 degrees F. or less. Slaw containers were stacked too high in the pan. Those on top (too high above pan line) were discarded. Blue cheese was placed on ice to rapidly chill back down. PIC said cooler with blue cheese had come unplugged for approximately five minutes. Tomatoes and other items on top were in temperature and foods below in cooler were also in proper temperature limits. Corrected On-Site.
